
Zeronimo
Zeronimo emerged from a personal quest. When Austrian winemaker Katja Bayer was pregnant, she and her husband Patrick searched for alcohol-free wines that could satisfy their trained palates. Finding nothing acceptable, they decided to make their own at their family winery, Heribert Bayer, in Burgenland.
The debut came in July 2023. The starting point matters: these are wines that earned serious recognition on the alcoholic circuit before being dealcoholised, which gives Zeronimo a credibility most AF wine producers can't match.
Their Sparkling Select blends Pinot Blanc, Chardonnay, and Sauvignon Blanc, matured in stainless steel before a careful vacuum distillation process designed to recover the wine's aromatic character. The result is genuinely dry, extra brut, with roasted almond, brioche, and stone fruit notes. It's aimed squarely at Champagne drinkers who want the experience without the alcohol.
Zeronimo keeps sweetness out of the equation where most producers lean on sugar to compensate. The wine clocks in under 0.5% ABV and is vegan and additive-free.
Available through specialist AF retailers including Dry Drinker. At luxury pricing, it's positioned for occasions rather than everyday drinking, but that's broadly true of the wines it's modelled on.
