About This Drink
The Leonis Blend starts as In Signo Leonis, an existing award-winning cuvée from the Heribert Bayer winery at Neckenmarkter Hochberg in Central Burgenland. The grapes come from old vines and the wine spent two years in new French oak barriques before dealcoholisation. Zeronimo's process uses vacuum distillation at low temperature, with a patented aroma recovery step that reintroduces volatile compounds lost during alcohol removal. The intention is to preserve what the winemaker built rather than produce something that merely resembles red wine. The result pours a deep garnet. Dark cherry and fig come through on the nose with orange zest, bitter chocolate and black tea beneath. On the palate it is juicy and layered: blackberries, rose hips and sweet dark cherry at the core, wrapped in silky tannins that have clearly benefited from those two years in oak. Bergamot and vanilla appear mid-palate with a light forest floor note in the background. The texture has real presence through the mid-palate without feeling heavy. The finish is long with a lively acidity that lifts the fruit rather than cutting through it. Among alcohol-free reds, the structure here is genuine. This is not a thin pour.
