Dill Dreams
A gose brewed with dill instead of the usual coriander. Tart, lightly saline, and herbal in a way most beers aren't.
About This Drink
Gose is a German wheat beer style defined by tartness and salt. Athletic's version swaps the conventional coriander addition for dill, a herb more commonly found alongside salmon or in a pickle jar than in a pint glass. It's unusual, and knowingly so. The aroma makes the dill obvious immediately: fresh, grassy, and herbal, sitting alongside the lactic sourness you'd expect from a well-made gose. Hazy pale yellow in the glass, lightly carbonated with a thin head. On the palate the tartness arrives first, then the dill develops mid-palate into something almost savoury. A touch of salt reinforces the mineral quality. The finish is clean, tart, and herbaceous, drying quickly. This is a beer for adventurous drinkers or very specific food pairings: smoked fish, pickled vegetables, and Scandinavian-style dishes are obvious partners. Worth trying once; whether you come back to it depends entirely on how you feel about dill.
