Rügener Insel-Brauerei uses open fermentation for this one, a traditional method that encourages the kind of ester production responsible for a proper Hefeweizen character. Bottle-conditioning adds a second layer of complexity and gives it that natural cloudiness in the glass. The result pours hazy golden with a creamy white head. Banana leads on the nose, with clove spice sitting just behind it. On the palate there's a richer texture than most AF wheat beers manage: the banana and clove stay present, there's a soft toffee sweetness coming from the wheat malt, and a hint of honey underneath. The body is fuller than you might expect at 0.0%. It's a genuinely good alcohol-free Hefeweizen. The production method does real work here and it shows.
