Jukes 1 is the flagship white in the Cordialities range, created by drinks writer Matthew Jukes using a method rooted in 17th-century haymaker's punch. Organic apple cider vinegar forms the base, with each ingredient macerated separately before blending. That process is what separates it from a standard cordial: the vinegar acts structurally, in the way wine's tartaric acid does, giving the final drink lift and length rather than flat sweetness. The nose opens with fresh peach and cucumber, then stone fruit blossom and a faint pineapple note underneath. On the palate the stone fruit gives way to tart apple, the body stays light, and the finish stretches long with a clean lemon zest bite. The acidity holds everything together without being sharp. It works with still or sparkling water, or tonic, depending on how you want to pitch the occasion.
