Forest is made via botanical distillation and extraction, which gives it the kind of weight and structure you don't always get from non-alcoholic alternatives. It pours a deep amber with warm golden tones and has a genuinely viscous, rounded mouthfeel. On the nose, orange blossom and saffron come through first, softened by vanilla and a faint honeyed sweetness. The palate is considerably drier: vetiver and angelica root bring an earthy, almost mossy quality, while cassia, cinnamon and liquorice add spice and depth. The bittersweet balance is well-judged. The finish is long and gently warming with a woody persistence. It's one of the more complex non-alcoholic aperitifs around, and works well wherever you'd reach for a Campari or Aperol but want something with a different botanical character.
