Wignac is a family producer from the Ardennes, and Lady Squirrel is their take on alcohol-free cider: nothing but organic apple juice, lightly carbonated. No sulphites, no added sugar, no colouring. It holds both Ecocert and CERTISYS organic certification, which is worth noting as the Belgian organic certification process is fairly rigorous. In the glass it's pale straw yellow with a fine sparkle. The nose is straightforward and clean: fresh-pressed apple with a hint of melon and a barely-there floral note. On the palate you get crisp apple up front, a bit of tangy skin character mid-palate, and a soft melon sweetness at the back that stops it tasting thin. The body is light without feeling watery. The finish is drier than you might expect from an apple-based drink, which works in its favour. Serve it well chilled.
