Wild Wave is made for Adnams by Rod Clifford, a Gloucestershire cider maker who put together a blend of bittersweet and dessert English apples. The idea is a distinctively English cider character rather than the sweeter, fruit-concentrate style that often fills the low-alcohol category. It pours straw-coloured with fine effervescence. Fresh apple is the dominant note throughout, with a subtle tropical edge on the aroma. The blend creates some genuine tension between fruit sweetness and a drying finish, which keeps it from tasting flat or cloying.
