About This Drink
Spumante is made from 100% Glera, the traditional grape behind Prosecco, grown on the limestone and clay hillsides of Treviso in the Veneto. The site catches Mediterranean sun by day and cool alpine air by night, conditions that preserve Glera's natural acidity and delicate aromatics. After cold fermentation in stainless steel, the wine matures for twelve months before dealcoholisation at low temperature to retain both perlage and aromatic clarity. The pour is pale straw with a lively, persistent bead. The nose is clean and fresh: Nashi pear and green apple lead, lifted by elderflower and a touch of grapefruit. On the palate, the wine is light and crisp with fine effervescence and brisk acidity. Nothing heavy here; it has an airy, almost delicate quality. Glera is well suited to dealcoholisation because its character comes from aromatic compounds rather than alcohol weight. The result is closer to its source than many dealcoholised sparkling wines manage.
