Lyre's White Cane is a zero-proof alternative to white rum, built on natural extracts to approximate the character of a gently aged white rum. There is no fermentation: the sugar cane note comes from flavouring work rather than any actual cane distillation. The nose leads with oak, sugar cane, and toasted nuts, with citrus and light vanilla. On the palate, oak and sugar cane provide the base for marzipan, orange, and coconut to come through. The finish is light and peppery, with a dry, crisp close. Most at home in rum-based cocktail builds: a Mojito with lime and mint, a Daiquiri with citrus, or a Pina Colada where the coconut note in the spirit plays naturally with the mixer.
