The botanical lineup here is coherent and distinctly Mediterranean. Sage and thyme do most of the heavy lifting on the palate, with olive leaves adding a faintly bitter, green edge and lavender keeping things aromatic without tipping into soap. Lemon verbena gives it a citrus brightness that lifts the whole thing. What makes it different from most non-alcoholic spirits is how it's made. Rather than distilling or dealcoholising, Sabatini use a straight infusion process - the botanicals are macerated without alcohol as a solvent. The result is clean and light-bodied, which suits the style. It works well as a long drink with tonic, where the herbal notes come through without competing with a lot of sweetness. Not the most complex spirit in the AF category, but it's honest about what it is.
