The base here is aged apple cider vinegar, which gives Batch 36 a tangy, vinous backbone that sets it apart from most spirit-adjacent alternatives. The botanical infusion runs to rosemary, thyme, gentian root, wormwood leaf and orange zest, with organic wildflower honey rounding off the sharper edges. The whole thing takes a year from start to finish and comes out syrupy and concentrated. It's designed for dilution, typically with soda or tonic, which opens it up and lightens the body considerably. Once diluted, orange zest leads, backed by clean herbal notes and a dry, bittersweet finish from the gentian and wormwood. The vinegar tang sits underneath rather than dominating. For something with no alcohol and no artificial additives, it has real complexity.
