Ritual's approach here is to build from scratch rather than dealcoholise anything. The base is a botanical blend using juniper, Siberian pine, coriander, angelica root, English cucumber, lemongrass, basil, peppermint, prickly ash, and capsicum fruit, with xanthan gum added to thicken the texture toward something spirit-like. The result is clear, fairly viscous, and smells recognisably of gin: juniper up front, then cucumber and citrus, then something herbal underneath. On the palate the pine and juniper are the dominant notes, with cucumber adding freshness and the lemongrass lifting the mid-palate. The capsicum builds gradually into a warming finish that does a reasonable job of standing in for alcohol burn. Where it falls short of the real thing is in complexity and depth. It works best in simple applications like a G&T or a Gimlet, where the botanical character can do the heavy lifting without the cocktail demanding more from the base. In a Martini, the absence of any fermented character is more apparent.
