GUTsy Captain Zero Original uses the same organic green tea and SCOBY fermentation as the standard Original, but the fermentation runs for longer until the bacteria consume all the cane sugar. A small amount of natural bergamot flavour is added post-fermentation. The outcome is noticeably more austere than the standard version. The pour is a clear pale amber with light carbonation. On the nose it is clean and tart: green tea, a hint of bergamot, and the unmistakeable fermented sourness of kombucha. Without residual sugar, the palate is noticeably sharper than the standard range. The tartness is prominent, the green tea character clean. The bergamot adds a subtle floral lift that keeps it from being purely acidic. The finish is dry. The Zero Original is a useful daily kombucha for anyone avoiding sugar entirely. It is a straightforward product without frills.
