About This Drink
Part of Omnipollo's non-alcoholic Bianca gose range, this variant moves into darker fruit territory. Blackberry gives the tart backbone; marshmallow adds a soft, confectionery sweetness that takes the edge off the sourness without smothering it. It pours a vivid deep pink-purple, hazy and opaque. The aroma is dominated by ripe, slightly jammy blackberry, with the marshmallow reading more as vanilla-adjacent sweetness than pure sugar. On the palate the tartness is clean and direct, with the dark fruit centre stage and the creaminess emerging through the mid-palate and into the finish. The lassi base keeps the whole thing from feeling thin. A dessert-forward sour that commits fully to the concept. Best served cold. The kind of drink that's easier to enjoy if you go in expecting something rich and fruit-led rather than a conventional sour beer.
