About This Drink
Wild Idol's approach is straightforward: press the grapes, chill the juice for up to twelve months, bottle it. No fermentation, no dealcoholisation. The Müller-Thurgau grapes from Rheinhessen give it enough fruit character to work on its own terms rather than as an imitation of something else. It pours a clear, pale straw with fine bubbles that hold well. Green apple and lime zest come through on the nose, with white peach and something honeyed underneath. On the palate, the apple and citrus carry through cleanly with a delicate floral note. The finish is short and crisp with a light green edge to it. It won't fool anyone who's after a glass of Champagne, but as a 0.0% sparkling drink it's well made and doesn't taste flat or artificial.
