Both varieties are dealcoholised, with effervescence added before bottling. White peach and tropical fruit come forward on the nose, carried by fine, persistent bubbles. The palate is fruit-driven and clean, without thinness. The Sauvignon Blanc provides the backbone and freshness; the Pinot Noir adds just enough to lift the profile beyond the ordinary. It holds up well as a celebratory pour. Serve very cold.
