About This Drink

Wild Idol Brut sits at the drier end of the range. It's made from Müller-Thurgau grapes grown in Rheinhessen: the pressed juice is chilled shortly after harvest, stopping any fermentation before it starts. There's no dealcoholisation step involved, which puts it in a different category from most AF wines. The result is pale and clear with a fine bead. Green apple dominates on the nose, with a touch of citrus alongside. On the palate it's clean and light, with gentle acidity and very little residual sweetness. The finish is short and dry. It's not trying to be a Champagne substitute; it's a different kind of drink that happens to look the part in a flute.
