About This Drink
Giffard uses a double pineapple approach here: fresh fruit and candied pineapple together, both macerated in white wine vinegar following their shrub method. The result pours amber yellow and smells like something from a patisserie counter. The aroma leads with exotic fruit and the warm sweetness of candied pineapple, with a caramelised edge that marks it as distinct from simple fruit juice. On the palate those candied, buttery notes dominate. This isn't a sharp or fresh pineapple character but a richer, more confected expression. The vinegar maceration adds enough acidity to keep the sweetness from cloying. It's concentrated and sweet, so it works best as a flavour component alongside citrus to balance the richness. Tropical cocktail builds, longer punches, and spritzes are its natural territory.
