About This Drink
Rather than distillation, Giffard uses a shrub-making technique for this range: the elderflowers are hand-picked and steeped in white wine vinegar to pull out their aromatic compounds. It produces something more concentrated and vinegar-bright than a conventional cordial. The nose is striking. Elderflower is there, but so is lychee and a thread of saffron that gives it an unexpected warmth and depth. On the palate, lychee and rose lead, threaded through with a wormwood-like herbal note and a gentle citrus acidity that keeps it lively without turning sharp. It's built as a cocktail ingredient rather than a straight sip. A measure over ice with tonic or sparkling water makes a clean, floral long drink. The vinegar base also means it integrates well in stirred or shaken builds where you'd normally reach for St-Germain or similar.
