Made by Spirits of Virtue in Scotland, London Blend uses water drawn from Pannanich Wells on Deeside, a spring that filters for around fifty years through the Grampian mountains before it reaches the bottle. That provenance matters here: the mineral base gives the liquid a clean, precise quality that sidesteps the cloying sweetness you get from some spirit alternatives in this category. The botanicals are all natural. Elderflower comes through on the nose first, sweet and faintly honeyed without tipping into perfume, with green apple and sharp gooseberry alongside. The palate is citrus-led, bright and zesty, and the alpine juniper lands in the finish to add the dry structure that makes this feel like a proper London Dry rather than a cordial. It is designed to be diluted, not sipped neat. At a 3:1 ratio with tonic it behaves well, and it holds up with elderflower sparkling water or a Mediterranean tonic with lemon just as reliably.
