About This Drink
Whitley Neill's spinning cone vacuum column still breaks the base gin into three streams: water, flavours and aromas, and alcohol. The first two are recombined at zero ABV. It's a more involved process than most, and it shows in the result. The botanical structure comes through clearly, rather than having flavours added back in after the fact. The nose leans into juniper, with warm spice underneath: cassia bark, a touch of cardamom, something faintly peppery. On the palate, the dried citrus peel and botanical dryness of a classically styled gin spirit come through well. The spice develops across the mid-palate without turning sweet. The finish is dry and clean, with a faint resinous quality and lingering spice. Of the four alcohol-free expressions in the Whitley Neill range, this is the most conventionally gin-like.
