About This Drink
Pale Fox comes from a single estate in what they call the Valley of the Foxes, in the Asolo hills northeast of Venice. The wine is fully fermented from a Pinot Grigio and Glera blend, then the alcohol is removed by inverse osmosis. That process tends to be gentler on flavour than heat-based methods, and it shows here: this tastes like a wine that's had its alcohol taken out, not like grape juice with bubbles added. It pours pale straw with fine, persistent carbonation. The nose is fresh and floral, white blossom and green apple. On the palate it sits in an extra dry style with ripe pear and peach upfront, a citrus lift through the middle, and toasted almonds giving a faint savoury edge. The finish is clean and dry. It's low in sulphites and vegan. At 75cl in a proper bottle, it holds its own at a table where other people are drinking wine.
