Doublewood is Sobour's attempt at the complexity that comes from aging spirit across two wood types, built without alcohol from botanical extracts and distillates. The Cairngorm spring water base gives it a clean foundation to work from. It pours deep amber. The nose is warm rather than sharp: Madagascan vanilla, soft oak, honey. On the palate, toasted oak and dry spice lead, with burnt caramel and light smoke adding depth underneath. The finish is smooth and lingers with gentle sweetness balancing the drier wood notes. Among the three Sobour expressions, this one sits in the middle in terms of intensity.
