The alcohol is taken out after fermentation using vacuum distillation at low temperature, which is the right approach for preserving the wine's aromatic character. Whether it fully succeeds is another matter, but you can taste the effort. In the glass it's pale yellow with a steady stream of fine bubbles. Green apple and tropical fruit come through on the nose, with white blossom underneath. On the palate it's light-bodied and citrus-led, with enough acidity to stop it tasting flat or syrupy. The finish is short, leaving a clean citrus note behind. It sits in the easier end of the alcohol-free sparkling wine category. Nothing complex, but the balance is decent and the bubbles hold up well.
