About This Drink
Ariel sources these grapes from J. Lohr's Monterey County estate, ferments and barrel-ages in the conventional way, then removes the alcohol by cold reverse osmosis at below 55°F. Keeping the temperature down matters for white wine in particular: heat drives off the delicate aromas you're trying to preserve. The colour is pale gold, clean and bright. Fresh pear and green apple come through on the nose alongside butterscotch and toasty French oak - classic Monterey Chardonnay territory. On the palate it's lighter-bodied than its alcoholic counterpart, with a gentle creaminess and enough citrus acidity to prevent it reading as flat. The finish is soft, fading cleanly with a trace of vanilla. It's an honest dealcoholised white that doesn't try too hard to compensate for what's missing. Chill it properly - around 10-12°C - and it holds up well.
