About This Drink
Scavi & Ray take their base white Italian wine and run it through vacuum dealcoholisation, a lower-temperature process that's gentler on the aromatics than heat-based methods. The pale straw colour and fine, persistent bead are both intact once it's in the glass. Pear and citrus zest lead on the nose, with a faint vanilla note underneath. On the palate there's green apple and ripe pear, lightly sweet with clean acidity behind it. The bubbles are fine and carry through to a crisp finish with some lingering citrus. It comes in at 22 kcal per 100ml. Serve well chilled in a flute or coupe. The bottle shape and cork closure make it presentable on a table, which is presumably part of the point.
