About This Drink
Domaine de la Baume is based in the Languedoc in southern France. The Saint Paul Chardonnay goes through vacuum distillation over a minimum of 30 hours to remove the alcohol, a slower approach than some producers use, with the aim of keeping the aromatic profile intact. In the glass it's bright yellow. The nose opens with white flowers and citrus peel, and there's ripe apricot and vanilla underneath. On the palate it's creamy and medium-bodied with stone fruit and a pineapple note, and the finish is crisp and clean. It's just off-dry, so there's a little sweetness, but it doesn't linger heavily.
