Ceder's uses a proprietary distillation process to extract flavour from botanicals without any fermentation or alcohol production. The result is zero ABV and zero calories, but the process does give it more structure than a simple flavoured water or cordial. The palate is led by juniper and coriander, which gives it a familiar gin-adjacent character. Rooibos adds an earthy warmth underneath, and there's citrus brightness and some floral lift from the geranium. The mouthfeel is on the lighter side, with a clean, delicate finish. It won't fool you into thinking it's gin, but it holds together well in a long drink with tonic. It's designed as a G&T base and that's where it works best.
