The Lemon Aperitif is built around lemon and buchu, a fynbos shrub with a blackcurrant-like aromatic quality that adds real complexity and stops the whole thing reading as a simple citrus cordial. African Wormwood, aloe vera, and quinine contribute the bitterness that makes it sit in aperitif territory. Produced through hydro-distillation, the botanical flavours are captured and balanced before blending. The nose is bright and clean, lemon upfront with buchu's faint blackcurrant note following behind. On the palate, the lemon leads but the aloe and quinine bring a layered bitterness that builds as the drink develops. The finish is mouth-watering and herbal rather than simply tart. Over ice with tonic is the sensible serve, or soda with mint for something lighter.
