About This Drink
The 60-hour dealcoholisation process is the headline detail here. Wiper and True take a traditional German Helles-style base, with barley, hops, yeast and water, and spend two and a half days slowly reducing the alcohol to 0.5%. The aim is to preserve as much of the original flavour as possible rather than stripping it back along with the ABV. In the glass it's a clear pale straw with a fine white head. Fresh bread on the nose, a faint grassy quality, and a light herbal note from the German hops. The palate follows through with light malt sweetness and clean hop bitterness, nothing synthetic or thin. The carbonation does its job and the finish is properly dry. Unfussy and well-executed. Among AF lagers, it leans more flavourful than most without being complicated about it.
