Noughty's sparkling rosé is 100% organic Tempranillo from La Mancha's sandy, calcareous vineyards in southern Spain. After stainless steel fermentation, the skins get a four-hour maceration to pull through colour and a little structure before the wine goes through vacuum distillation with aroma recovery for dealcoholisation. It's then lightly carbonated and bottled at 0.0% ABV. It pours a classic pale rosé pink, clear and bright, with fine bubbles that lift the aromatics. Fresh strawberry and red berry fruit come first on the nose, with a faint elderflower note behind. On the palate the sweetness and acidity are reasonably balanced, it leans slightly sweet but not in a way that feels artificial. The finish is clean and relatively brief. It's the most widely certified of the Noughty range: organic, vegan, halal and gluten-free. Serve well chilled. Works well for toasts, celebrations or anywhere a light Provence-style sparkling rosé would normally go.
