About This Drink
Mountain is made from 12 botanicals via distillation and extraction. The flavour builds in a clear arc: cherry blossom and marzipan-like almond character up front, then wild strawberry and black cherry in the middle, then wormwood and rosehip acidity pulling it back to something drier at the end. On the nose it's fruit-forward and floral, with ripe strawberry and cherry blossom dominant, a touch of rose petal and a hint of dried cherry underneath. The palate follows the same pattern but the wormwood asserts itself more clearly, stopping it from reading as simply sweet. There's enough bitterness to give it some structure. The finish is tart and dry with a distinct rosehip acidity and a faint bitter note. It's the most fruit-led of the three Everleaf aperitifs and works well in builds that need something floral and bitter to anchor them.
