Atopia Rhubarb & Ginger comes from Lesley Gracie, the Master Distiller behind Hendrick's Gin. It shares the same botanical foundation as the rest of the Atopia range, orange, juniper, coriander, angelica root and lemon peel, with rhubarb extract, ginger, grains of paradise and grapefruit layered on top. It is more complex than a straight rhubarb-and-ginger cordial. On the nose, rhubarb comes forward quickly, bright and a little acidic, with warm citrus from the lemon peel and grapefruit sitting underneath. The palate opens with a round fruitiness before the rhubarb sharpens, somewhere between tart and jammy. Ginger builds gradually rather than hitting upfront, and the finish is clean and spicy with a faint wormwood bitterness on the close. The colour is a pale blush pink. It works well long over ice with a premium tonic, where the carbonation brings out the aromatics. A slice of pink grapefruit is the obvious garnish.
