This is a canned RTD that tries to do what most AF gin alternatives can't quite manage: deliver the full G&T structure without the alcohol. Fever-Tree leans on what they know, starting with their Mediterranean tonic and layering in juniper berry extract and quinine from the Democratic Republic of Congo. Lemon thyme from Provence adds a floral, herbal edge that lifts the nose beyond standard tonic territory. In the glass it looks the part, clear and sparkling. The juniper comes through cleanly, backed by that quinine bitterness that gives any G&T its backbone. The lemon thyme keeps things from feeling too sharp, lending a soft herbal note that threads through to the finish. It's not identical to a spirit-based G&T, but it's a closer approximation than most. Best over ice in a large glass. The carbonation is crisp and the bitterness sits in the right place throughout.
