LA Brewery ferments fair-trade sencha green tea for six weeks with live kombucha cultures before adding hop character alongside lime and tropical fruit. The result sits somewhere between a craft soft drink and a sessionable alternative to beer. It pours a clear pale gold. The nose is zesty, leading with lime peel and a faint green tea earthiness underneath. On the palate the kombucha tartness comes first, then lime and a light hoppy bitterness at the back. Carbonation is lively. The finish is crisp and clean, with a lingering citrus note rather than any sweetness. For a kombucha it has real structure. The hop bitterness gives it a dryness that most kombuchas lack, which makes it genuinely interesting rather than just fermented fruit juice.
