A switchel-inspired non-alcoholic aperitif made from double-fermented apple cider vinegar, organic ginger juice, and raw honey - sharp, warming, and nothing like anything else in the category.

The base is apple cider vinegar that's gone through two fermentation stages over two months: first converting apple juice to cider, then letting acetobacter convert the alcohol to vinegar. Organic ginger juice, ginger extract, raw blossom honey, and a hit of capsicum are blended in. There's no alcohol to remove and no spirit base - it's built from scratch as a non-alcoholic drink. Poured over ice and topped with soda, it comes out an amber-gold colour. The ginger arrives first, bright and a little citrus-edged rather than the dull heat you get from powdered ginger. The apple cider vinegar gives a clean tartness underneath, and the honey keeps it from tipping into harsh. The capsicum builds at the back - not overwhelming, but you'll notice it. The standard serve is 25ml to around 150ml soda. At that ratio it's a properly low-calorie long drink with real bite. If you find most non-alcoholic aperitifs too sweet or too timid, this sits in a different part of the spectrum entirely.
