
Mother Root
Mother Root grew from personal frustration. Founder Bethan spent a decade working in wine and luxury spirits before pregnancy made her realise how few options existed for non-drinkers who wanted something interesting. Not sweet. Not childish. Something with the acidity, length and depth she missed from wine.
She found her answer in switchels: traditional American drinks made from apple cider vinegar and water, often flavoured with ginger. Farmers once kept these chilled in streams for their breaks. The temperance movement favoured them for providing warmth and kick without alcohol. Mother Root revives this forgotten category for modern drinkers.
The Ginger Switchel contains no water at all. Instead, organic British apple cider vinegar forms the base, blended with blossom honey, fresh ginger juice, ginger extract, and a touch of capsicum for heat. The result is bold and zesty: fiery warmth balanced by natural sweetness and tangy acidity. They recommend diluting 1:6 with soda or tonic, though you can adjust depending on how much fire you want.
The apple cider vinegar comes from a UK producer using a combination of culinary and bittersweet apples with champagne yeast and a vinegar culture dating back to the 1970s. It's proper craft production, not industrial shortcuts.
Mother Root positions itself as an aperitif, something to drink before dinner or alongside food. The acidity cuts through richness. The ginger stimulates appetite. It fills the same ritual space as a pre-dinner glass of wine without the alcohol.
