Belvoir have been making this since 1984, working from a family recipe that predates the business. The elderflowers are hand-picked, infused in their Leicestershire spring water with fresh lemon juice and beet sugar, then bottled without artificial additives or preservatives. The result is a concentrate that dilutes into a floral, gently sweet drink with clean lemon running underneath. Syrupy straight from the bottle, it opens up well with sparkling water if you want something lighter. The elderflower character is genuine rather than synthetic. One of the better-known British cordials, and a reasonable benchmark for the category.
