Blanc de Blancs is a dry sparkling white from the Languedoc-Roussillon region of France, produced by Swedish brand Oddbird from Chardonnay and Colombard grapes grown on limestone, schist, and clay soils. The base wine spends twelve months maturing on fine lees before dealcoholisation at low temperature to preserve its aromatics and mousse. The pour is pale straw with a fine, persistent bead. On the nose, fresh Granny Smith apple and lime zest come through clearly, with a subtle thread of honey and brioche from the lees contact. The palate is brisk and clean: apple and lemon peel up front, underscored by a gentle almond note and something faintly mineral. The mousse is creamy rather than aggressive, and the finish is dry without austerity. For a dealcoholised sparkling wine, it holds together well. The lees ageing gives it more complexity than most in this category, and the dry finish means it doesn't drift into soft-drink territory.
