The grapes are 100% organic Chardonnay from sandy, calcareous soils in southern Spain, fermented in stainless steel and then dealcoholised via vacuum distillation with aroma recovery before being lightly carbonated. The aroma recovery step matters here: it recaptures some of what evaporates during dealcoholisation, and the result is noticeably more aromatic than many in this category. In the glass it pours pale straw gold with fine bubbles. The nose is floral and citrus-led, with honeysuckle and jasmine. On the palate there's green apple and pear, a hint of stone fruit, and the tartness you'd expect from a cooler-climate Chardonnay style. The bubbles are gentle rather than aggressive, more cremant than champagne. At 14 calories per 100ml it's one of the lighter options in the AF sparkling category. Certified organic, vegan and halal.
