About This Drink
Pallini has been making limoncello in Rome since 1875. Limonzero is their zero-proof version, built around the same Sfusato lemon peel from the Costa d'Amalfi that goes into the alcoholic original. The Sfusato is a protected variety grown on the Amalfi slopes, prized for thick, oil-rich skin with exceptional fragrance. Without alcohol to act as the carrier, the flavour comes instead from infusing that peel in water with sugar and citric acid. It sounds simple, and the result is more genuinely limoncello-like than you might expect. The colour is a clear, sunny yellow. The nose is immediate: candied lemon peel, fresh zest, something closer to the orchard than a confectionery shelf. On the palate it's sweet and full, with real citric tartness cutting through the richness. The texture is noticeably silky, which helps carry the lemon oil character through to a long, clean finish. At 0% ABV it's the obvious choice anywhere a recipe calls for limoncello. It also works well over ice as a digestivo, though you lose the warming burn that makes the alcoholic version feel like more than just lemon cordial.
