ISH takes organic Mexican agave as the foundation and layers in American oak, bay leaf, barley and a touch of brown sugar to produce the earthy, slightly woody character that distinguishes a rested tequila from a blanco. Botanical extraction and steam distillation techniques similar to traditional tequila production are used. A chili seed shell distillate delivers the warmth that alcohol would otherwise supply. On the nose it shows herbal agave with a dry, woody note from the oak. The palate follows: clean earthiness, smooth and rounded. At 0.3g sugar and 12 kcal per 100ml it is exceptionally light for a spirit-style drink. The finish is dry and unhurried. The brand positions this for mixing rather than sipping neat, and it works best in cocktails: a Margarita or Paloma are the obvious applications.
