About This Drink
Jukes 8 sits between the citrus brightness of Jukes 1 and the dark fruit depth of Jukes 6. The flavour profile draws on Provence as a reference point: aromatic, floral and dry, with the kind of restrained elegance that good southern French rosé tends to have. The vehicle is the same organic apple cider vinegar base, macerated separately with watermelon, cucumber, pear, melon, raspberry, apple and rhubarb. Mixed with still or sparkling water, the colour lands in a pale blush. The nose is aromatic and perfumed: melon and pear arrive first, then watermelon and a note of rhubarb. The palate is silky and precise, staying dry throughout. There is a faint mineral quality, something almost like ozone, that keeps it from being purely fruit-driven. The finish is clean and long. Of the three concentrates in the range, this is the one that most consistently prompts double-takes from people expecting something sweet.
