About This Drink
The base wine is dealcoholised at low temperature, which keeps more of the aromatic character intact than harsher processes would. Carbonation and a little rectified grape must go back in afterwards to round it out. In the glass it's pale blush pink with a lively stream of fine bubbles. The nose leads with wild strawberry and raspberry, with a rose petal note underneath. On the palate there's fresh red berry fruit, light sweetness kept in check by crisp acidity, and a clean finish without any of the hollow sweetness that can dog this category. It sits in the sweeter end of the dry spectrum. Works well chilled as an aperitif or alongside lighter food, though it stands up fine on its own.
