GUTsy Captain Coconut is made from fermented green tea and cane sugar with natural coconut flavour and organic fruit extracts added after fermentation. The result leans tropical without losing the fermented tea character that defines the rest of the range. The pour is pale gold with a light natural fizz. On the nose there is soft coconut, a hint of something almost toasty, and the clean sour note that sits at the heart of any well-made kombucha. On the palate it is gently tropical: coconut without the cloying sweetness of commercial coconut drinks, supported by the tartness of the fermented base and a background of green tea. The finish is clean and dry. Among the GUTsy Captain range it is one of the more distinctive flavour choices. The coconut addition is handled with restraint, which is the right call.
