GUTsy Captain Raspberry is built on a base of fermented green tea and cane sugar, with natural raspberry flavour and organic fruit extracts added after fermentation. The process keeps the underlying kombucha acidity intact while the raspberry character sits clearly on top. The pour is a translucent pale rose-pink with fine, gentle carbonation. On the nose there is fresh raspberry, a hint of berry sweetness, and the clean slightly vinegary note of fermented tea underneath. On the palate the raspberry is upfront and ripe without going jammy, balanced by the natural tartness of the kombucha base. Sweetness is restrained. The finish is short and crisp, leaving a clean berry and tea aftertaste.
