Carl Jung Merlot BIO is the certified organic version of their standard Merlot. Grapes are grown without synthetic treatments, and the wine is dealcoholised using the same vacuum extraction technique the brand has used for over a century. The process operates at low temperature to draw out the alcohol without stripping the fruit character. The wine is a clear ruby red. Aromas of blackberry and plum open quickly, with a soft earthiness beneath. The palate has the smoothness typical of Merlot, with ripe dark berry fruit and a fine tannic backbone providing structure. Chocolate notes come through in the mid-palate, and the finish fades with fruit rather than tannin. The flavour profile is very close to the standard Merlot. The organic certification is the main practical difference.
