About This Drink
Carl Jung Merlot is made from Spanish Merlot grapes put through the brand's century-old vacuum dealcoholisation process. The method works at low temperature to draw out the alcohol while keeping the fruit aromas largely intact. It pours a clear ruby red. The nose opens with ripe blackberry and plum, with a gentle earthiness beneath. On the palate the fruit is soft and round, with some tannin structure that gives it more body than many dealcoholised reds. Chocolate undertones appear in the mid-palate, and the finish is medium in length with a fruity fade. The tannin structure is the thing that sets this apart from a lot of alcohol-free reds. It is not assertive, but it is there — enough to give the wine some shape rather than just sweetness.
