About This Drink
Limbo Mango is probably the most immediately approachable of Mikkeller's Limbo sour beers. The base is the same as the rest of the series: brewed at De Proefbrouwerij with mikkellensis yeast, which brings a reliable passionfruit and lemon tartness. Then 2.5% mango goes in, pulling the whole thing toward the sweeter, more tropical end of the spectrum. The aroma is forward and fruity, ripe mango at the front with the yeast's natural passionfruit note sitting just behind. On the palate, the mango is sweet but doesn't tip into cloying, kept honest by the underlying acidity of the base. Lemon keeps it bright. Carbonation is gentle, mouthfeel light. Good well-chilled, and pairs reasonably well with spiced food where the fruit sweetness can work with the heat rather than against it.
